Spring, ahhhhh, Spring!
Imagine if you were a puppy exploring all the budding scents and smells. Spring, ruff, Spring!! We don’t have those kind of olfactory senses, but we do have plants to remind us of how incredible new life smells.
Down in South Florida, our growing season is the inverse of the rest of the country. In Winter and Spring, farmers bring to market all of their fresh bounty. We are our own land down here, literally. Sometimes spring is so intense it puts new scents literally in our face. Have you ever tried fennel, for example?
Dear friend and Wild Woman Project Circle Leader, Jessica Shulruff Schneider, recently asked me “What the heck to do I do with this? Is this dill?” Fennel is a bulb-type vegetable. You can roast the white part in the oven and use the fronds for a pesto. I created a recipe for Jessica, which I share, with our whole community. Fennel has a slight licorish-type flavor that you either love or don’t. Get curious, see what you think!

Fennel Frond Pesto
There is no cheese in this recipe, which makes it a particularly fitting partner to seafood. Or add
1/2 cup grated Parmesan and use the pesto with grilled veggies, pasta, meat
(Makes 1 cup)
Ingredients:
- 1 cup roughly chopped fennel fronds
- 2 cloves garlic, roughly chopped
- 2 tablespoon pine nuts or slivered almonds
- 1/2 teaspoon coarse kosher salt
- 1/4 cup extra-virgin olive oil
Method
1. Combine the fennel fronds, garlic, nuts and salt in a food processor or blender and pulse until the mixture is chopped up.
2. Add oil and process/blend until the mixture becomes paste-like. (You may have to scrape down the sides of the bowl.) Serve pesto at once, refrigerate for up to a week, or freeze for up to a month.
